Pineapple Chicken & Rice - Serves 8
2 cups instant rice
2-3 cups pineapple juice
1 pound carrots, sliced
2 teaspoons brown sugar
3 cups cooked chicken, skin and bone removed
Jamaican jerk seasoning, to taste
Prepare rice in sauce pan according to directions using pineapple juice. Cook carrots in 1/2 cup of the pineapple juice and brown sugar. Add more juice if needed. Cook until moderately tender. Add chicken ans jerk seasoning, mix. Cook until heated through. Put rice in serving bowl and top with carrot and chicken mixture. Add a little more jerk seasoning if a spicy flavor is preferred.
